Amberjack fish, Latin name is Seriola dumerili, also called yellow tail fish, is known as Kanpachi in Japan. The maximum length of this fish can be 150cm, generally around 35-50cm; the body shape is oblong, slightly laterally flattened, and the ventral surface is rounded; the body color of adult fish varies greatly, with the back of the fish being blue-gray or olive, sometimes with a pinkish luster. It is distributed in tropical and subtropical waters around the world.
